Healthy Spinach and Ricotta Dip
Spinach and Ricotta is a classic Italian combination used in several dishes. Ricotta is the same as Indian homemade paneer (chena). If you can't find it in the store simple make it at home.
Homemade Ricotta/Cottage Cheese
Boil a liter of milk. Once it comes to the boil, squeeze in the juice of a lime or lemon till the milk separates into solids and liquid. Pass through a sieve and collect the solid cheese bits. Mince with the back of a fork to get a smooth consistency. That is your homemade ricotta- way healthier than store bought.
This lovely green dip makes a great sandwich spread or pasta sauce. Toss it with some cooked barley or quinoa for a healthy green and cheesy risotto.

What you need:
1 bunch spinach
½ onion, finely chopped
2-3 cloves garlic, finely chopped
½ cup ricotta/cottage cheese
¼ cup parmesan cheese
Salt
Freshly ground pepper
Some oregano
Chilly flakes (optional)
Dash of extra virgin olive oil
Putting it all together:
In a pan, heat some olive oil and cook the onions and garlic. Add the spinach and cook till wilted. Season.
In a blender, combine the cottage cheese, parmesan cheese, spinach mix, chilly flakes, oregano and blend.
To serve, add a drizzle of extra virgin olive oil. Adjust taste
