Mushroom Basil Stir Fry
Mushrooms have a lovely earthy flavour and a side dish of mushrooms makes a meal very complete. This is a quick stir fry with lots of basil, garlic and chilly. Add some black and white sesame seeds in the end for a delicate look. Feel free to adjust the flavour to your taste. This dish can be spooned on top of little bits of toasted bread to make a crostini. You can also add it to a fresh green salad to make a warm mushroom salad!

What you need:
2 cups mushrooms
1 tbsp sesame oil
5 cloves garlic, minced
1 tsp ginger, minced
2 red chillies, finely chopped
1 tsp light soy sauce
2 tsp dark soy sauce
½ tsp brown sugar
2 spring onions, finely chopped
¼ cup thai basil
2 tsp sesame seeds
Putting it together:
1. Heat some sesame oil in a pan. Add the ginger and garlic and chillies.
2. Add the mushrooms and brown.
3. Combine the sugar and soy sauces in a bowl.
4. Add the sauce, half of the basil and some salt to taste to the pan.
5. Add spring onions towards the end. Do not overcook.
6. Sprinkle over the white sesame seeds and some more basil.
